Do you have tomatoes coming out of your ears this year? We have been blessed with a huge abundance of them in our crops and everyone around us has as well, which is definitely not something to complain about but to be honest, there are only so many ways that you can bottle tomatoes.
Have you ever considered dehydrating your tomatoes? Doing this allows you to preserve them for later use, but not be strapped down to the option of a sauce or juice or whatever method you had chosen to bottle them. This way you can snack on them as a plain tomato or reconstitute them with moisture (liquid) and have pieces of tomato instead of a sauce or liquid. Try it out on a batch this year and see what you think.
